Keep in mind that protection dogs used by police or others have to start off being extremely stable, non-aggressive dogs that are trained to do the action of biting but can, in high excitement mode, still obey the command to STOP. Unless your dog can obey immediately by verbal command only even when there is something exciting (a big juicy steak sitting on his nose, a squirrel running by, etc), consider yourself very fortunate that your dog doesn't try to attack people. You should be the leader of your pack, and he should look to YOU for guidance.

One thing you can do is to teach your dog to bark loudly on command. For things such as defending the house or scary away potential attackers, your dog does not need to be aggressive, just intimidating. If you teach your dog to bark like crazy on command, you'll still be safe, your dog will still be safe, and potential attacker will go the other way or choose another house, because they won't know the difference.
