| Not Italian. How about Mexican? CHICKEN RANCHERO 3 lb. chicken thighs - (preferably boneless) salt & pepper 1/3 c. water 1 pkg. enchilada sauce mix 1 (6oz) can tomato paste 2 c. grated jack cheese 1/2 c. sour cream 1/4 c. green onion, diced sliced black olives I prefer to take the skin off the chicken (so it doesn't get limp & fatty in the crockpot); sprinkle with salt & pepper. Place in crockpot. Combine enchilada sauce mix, tomato paste & water; Spread mixture on top of meat. Cover and cook on low about 6 hours, or until tender. Turn control to high, and add cheese. Stir until cheese melts. Serve with sour cream over each piece & sprinkled with green onions & black olives...... |

| Mines not Italian..but this is what I like to do. I put chicken breasts in the crockpot, and cover it w/Rotel, I don't like hot stuff so I use the mild kind...cook it all day..when I get home it just falls apart w/a fork...its very yummy! |

| Take some boneless chicken breast and add minced garlic (or garlic powder), onion powder, basil and a couple chicken boullion cubes and a little bit of water (just enough water to cover the boullion cubes). Basil is the main ingredient so I use lots. It will be very tender and just fall apart.....YUMMY ![]() Another is, use the same - boneless chicken breast and cover it with creamy italian dressing. Let it cook about 5 hours on high, or 7-8 hours on low. Serve over white rice. ***Make sure it's CREAMY italian dressing or it will be way too oily. |

| 40 clove garlic chicken stuff 40 cloves of garlic in the carcus 1 cup of chicken broth in the bottom of the crock pot cook on low 8-10 hours |

| All I can say it load it up with olive oil, Italian spices and some garlic and onion and maybe some tomato sauce and let it cook Good luck Sonia |
