Because benighted fools believe in God and the Catholic Church. They do not recognize that there is no God. They think that catholic education is the best thing for their sprogs.
Plus they think “it can not happen here or to my rug rat" 99.9% of catholic clergy are misguided but truly good people who believe what they spout. My teachers were sadists many of them, but good people with a thirst for knowledge. They were good teachers and prepared me well for the world. That said, they were also members of a cult, as are my parents and most people in the US today. That cult is Christianity, especially Roman Catholicism.

Let me first say that I'm a Christian but not Catholic. Catholic schools are a high-quality and generally safe environment for your child's education, probably much more safe than a public school. If you are referring to the scandal with a small number of Catholic priests a few years ago, those incidents were usually outside the context of parish-run schools and there are many new safeguards in place. For further information about a high-quality education in a religious setting for your child, you should contact your local Catholic school, or other Christian or Jewish schools in your area.

We don't. A lot of things are "commonly assumed" but that doesn't change the fact that the overwhelming majority of Catholic Clergy and other Religious are good and Holy people.

Some people just dislike the Catholic Church and use the Priest-abuse scandal to further fuel their hate for it. There have been far worse scandals in the Church over history, and as Jesus told us, there always will be. Jesus made the Church perfect; not the people who run it perfect. (Calumny is a sin, too!) If you're sinless, let me know; I'll nominate you for Pope!
