I buy a liter of Poland Spring sparkling water every morning. There's got to be a way to make something similar at home. Any ideas??

Dissolve yeast in a cup of warm water (98F) let stand 5 minutes or longer to dissolve, mix thoroughly before adding. Champagne, Wine or Beer Yeast is Preferred or you can use Fleischman or Red Star from your Local Grocery store.
Step 2.
Shake Extract bottle well. Combine Extract and sugar in sufficient warm water to dissolve sugar
(USE WARM TAP WATER)
Amount to be Made Amount of Extract Amount of Sugar Water needed
1 Gallon 1/2 oz 2 Cups 1 Gallon
2 Gallons 1 oz 4 Cups 2 Gallons
4 Gallons Full Bottle 8 Cups 4 Gallons
Step 3.
Now add Yeast mixture. Add warm water to bring level of liquid up to the correct amount chosen, as in the table above
Step 4.
Mixture can be tasted. More or less sugar or Extract to suit your taste
Step 5.
Fill sterilized bottles within 1 to 2 inches of the top depending on the type of bottles used. Seal with a hand capper or resealable caps. Bottles not sealed properly may become sour and will be flat.
Step 6.
Lay bottles on their side to check for leaks. Age 3 to 4 days at room temperature. Then store in cooler, dark place. Total Aging at least a week - 2 weeks improves flavor as natural carbonation takes place, a slight yeast deposit will form on the bottom. When serving pour carefully as to leave the yeast deposit. This is not harmful in any way but sometimes gives an off flavor. REFRIGERATE EXTRACT IF PARTIALLY USED
AND
THE FINISHED SODA BEFORE OPENING
