| Smoke it in a water smoker or Smokaroma. A water smoker has a pan of water between the coals and the meat. It cooks at low temperature, about 250 F, for a long time, say, 4 to 6 hours. The pan of water keeps the meat moist and the slow cooking tenderizes it. Of course, smoking adds a lot of flavor. You can use the sauce or rub of your choice; buy from a store or find a recipe on the Internet. Water smokers can be bought for $50 to unreasonably expensive at most places that sell barbecues, grills, and other types of smoker. For more info see the Source link. You can also call around to local barbecue joints and ask if they have a "Smokaroma" smoking machine (not the sandwich grill). This is a moist pressure smoking process. A Smokaroma can smoke and season a whole dear in one day. It can also season and cook without smoke. |
