I only have four people to cook for for xmas, so I was going to do 4 nice filet mignon steaks. Sear on one side for two minutes, and finish in the oven another 3-5 minutes. Tasty!

My family always insists on prime rib (although any roast is easy to prepare), horseradish sauce (which I buy), roast or mashed potatoes, and a green vegetable. Are you sure you want to back a cheesecake on that day? We like an assortment of Christmas cookies, although I have also included a pumpkin or chocolate cheesecake, which I make the day before.
