My daughter's favorite potatoes: (it's so easy, it's a non-recipe recipe - lol)

I cut potatoes into smallish pieces and boil in water until soft. Then drain them and add butter, salt and chopped parsley; stir just until the potatoes are coated with the butter and parsley.......

how about italian potato salad

2 lbs potatoes peeled and cut into large chunks
put potatos in boiling water with 1/2 tsp salt
cook about 20 minutes or until tender
cut 1/2 onion into slices
drain potatoes
run cold water over them, strain and put in fridge
when cooled, add onions,
1/4 tsp pepper,
1/4 cup wine vinegar or white vinegar or balsamic vinegar
1/4 cup olive or cooking oil...
toss all ingredients and put in fridge for a while till cool.....

mashed sweet potatos a really good and much better for you than white potatos. mash with a little butter and brown sugar...

Slice a few potatoes. In a casserole dish, or crock pot, begin layering the slices in over-lapping circles (or lines), spray each layer with oil and season with salt and pepper. Keep layering till you use up all your potato slices (usually up to 4 or 5 layers). Cover and cook in a medium oven for an hour. Turn the oven a bit higher, take off the lid and cook for another 20 minutes to half an hour for the top potatoes to brown (you can sprinkle on some cheese at this point if you so desire). These potatoes are very tasty and go well with just about anything.

Mash some nice potatoes, add milk, a splash of cream and finely chopped spring onions. Stir the mash on low heat until some of the moisture from the milk evaporates (usually about 5-8 min) then add pats of butter and turn the heat off. Season with salt and pepper. In ireland its known as Champ and its something to write home about!!!

mmmmmmm............

Garlic Red Potatoes
INGREDIENTS
2 pounds red potatoes, quartered
1/4 cup butter, melted
2 teaspoons minced garlic
1 teaspoon salt
1 lemon, juiced
1 tablespoon grated Parmesan cheese

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place potatoes in an 8x8 inch baking dish.
In a small bowl combine melted butter, garlic, salt and lemon juice; pour over potatoes and stir to coat. Sprinkle Parmesan cheese over potatoes.
Bake, covered, in preheated oven for 30 minutes. Uncover and bake an additional 10 minutes, or until golden brown.

We are having porkchops at my house tonight also...Ummm try Garlic and Herb potatoes...There super good and easy! You can fix them in the microwave or in the oven. All you do is cut your potatoes up, put them in a bowl, add butter, and any kind of seasoning you want! We use Garlic and Herb!...Let them cook in microwave till ready!
