Whether fiction or non-fiction, movies are often very well researched to be as realistic as possible, even using constructed sets and other artifices. Why not, they often cost millions of dollars to produce. Audiences can be very sophisticated and would spot gaffs in content. That said, most movies must entertain to hold audience attention and benefit by word-of-mouth. I had a friend who directed the lighting for a live theater who said that the best compliment he could receive was that no one noticed the lighting. A movie production crew (often quite large if you read the credits) tries to focus your attention on the characters and their story, so that you are never distracted by their behind the scenes work. If you have ever found youself engrosed and lost in a story and moved by it, you know exactly what I mean.
