I like to sautee it in a pan until it just wilts, with a little bit of olive oil and some crushed garlic.

You never want to over cook spinach.... Here are a couple of good ways:

FRESH SPINACH & BACON
Fry about 6 slices of bacon in a large skillet. When crisp, take them out and put in a bunch of fresh spinach (washed and torn). Saute in the hot oil until wilted and completely covered with the bacon drippings. Serve with crumbled bacon on top

And this is my family's favorite vegetable dish:

SPINACH, RICE & CHEESE
1/4 c. melted butter
8 oz. grated cheddar cheese
1/2 c. chopped onion
1 pkg. frozen chopped spinach, thawed & drained
1 c. Minute Rice, raw
1/2 tsp. garlic salt
1/4 c. sour cream
Mix everything together really well and put into 9x13" pan. Bake at 350 for 1 hour, covered...... (and don't fight over the crispy edges)

In a hot pan, pour some olive oil and add minced garlic. Add the spinach raw, crack some pepper and salt on top and stir it around for 30 sec. Then add a couple tbsp of white wine. When its 1/2 wilted remove from heat and grate on nutmeg.

blanched(hot water over the top then drained) tossed with some garlic oil and season(salt pepper
