I'm cooking fish atm and it says to preheat to 350 and put in at an external temp of 140. The temperature keeps going up at 140 to 360. Is that what they meant? Or should i lower the temperature to 140?

The temp of the oven should be 350 degrees. Cook until the outside temp. of the cooked fish is 140.Cook until it just flakes easily with a fork. Not to done or it will be tough. If it is breaded it will take a bit longer to cook.

just put it in there, the 350 pre-heat is good and as long as your fish is room temp you're ok.
