| *Freezer Breakfast Burritos 12 eggs 2 Tbsp. butter 1 lb. pork sausage, cooked and drained 1/2 cup chunky salsa 2 cups Cheddar or Pepper Jack cheese 24 flour tortillas In large skillet, melt butter. Beat eggs in large bowl and add to skillet. Cook eggs in butter, stirring frequently, until scrambled and set. Add cooked sausage and salsa to egg mixture and mix gently. Warm tortillas as directed on package. Place about 1/2 cup egg and sausage mixture onto each tortilla and sprinkle with some cheese. Roll up each tortilla to make burritos, folding in the ends and rolling up. Place on parchment paper lined cookie sheets and freeze until solid. Then wrap individually and package in zip-lock freezer bags. When you're ready to eat, unwrap the burritos, wrap loosely in microwave safe paper towel and heat in the microwave on high power for 1-3 minutes until hot and cheese is melted. You can also thaw burritos in the refrigerator overnight, then wrap each in foil and bake at 350 degrees for 10-15 minutes until hot. The thawed burritos can also be deep fried for 3-5 minutes until golden brown and crisp. 24 burritos *Bacon And Egg Burrito 2 slices bacon, cooked and crumbled 2 eggs, scrambled 1/4 cup shredded Cheddar cheese 1 flour tortilla Sprinkle eggs, bacon and cheese in the middle of a tortilla. Fold tortilla sides over and place in a plate, seam side down on a dinner plate. Microwave for 30 seconds - or just until thoroughly heated and serve. *Egg Burritos 2 eggs Tabasco sauce salt 1/4 cup cottage cheese, low fat 1 tablespoon fresh parsley 1 flour tortilla salsa, mild cheddar cheese, shredded Preheat oven to 400 degrees. Break eggs into bowl. Add a few dashes (depending on the number of eggs) of Tabasco sauce and salt. Whisk eggs and add a very small amount of cold water. Scramble eggs in frying pan. Use a baking dish large enough for the number of rolled burritos you need (1 per serving). Pour a layer of mild salsa in the bottom of the dish. To scrambled eggs, add cottage cheese and fresh parsley. Divide the mixture among the tortillas, rolling each tortilla into a burrito. When placing burritos in the baking dish, roll it around to fully coat in salsa. Place edges on bottom to keep them from unrolling. Sprinkle top of burritos with shredded cheese. They can either be put in the oven immediately (uncovered) or covered and put in the refrigerator overnight. Bake for about 15 minutes until the cheese is melted and the salsa bubbles. *Breakfast Burrito with Scrambled Eggs and Cheese 2 large wheat tortillas, heated 4 eggs, beaten with 1 tablespoon water Salt 2 tablespoons butter 1/2 cup grated Monterey Jack 1 serrano chile, finely chopped 2 scallions, including half of the greens, chopped Chopped cilantro Season the eggs with 1/2 teaspoon salt. Heat the butter in a nonstick skillet over medium heat until it sizzles. Add the eggs and scramble them. When they're nearly done, turn off the heat and stir in the cheese, chile, scallions, and cilantro. Scoop the eggs into the warm tortillas, fold them over, and serve. *Breakfast Burritos I 2 medium-sized flour tortillas (6 to 8 inches in diameter) 2 eggs 1 small potato, microwaved until 80% done 1/8 cup milk or cream 1/6 cup chopped onion 1/6 cup grated cheese (cheddar does well) 1 to 2 slices bacon, cooked cubed ham, or crumbled sausage 1/4 cup diced sweet bell peppers (red, green, or mix) Salt and pepper Bake a small potato in the microwave until almost done. Remove, peel, and dice into 3/8- to 1/2-inch cubes. Cut bacon in 1-inch lengths (or crumble equivalent amount of bulk sausage) and cook in hot skillet until almost done. Remove most of the grease, add chopped onion and saute until limp. (If using cooked ham, use a Tablespoon of oil to saute the vegetables, then add the ham.) Add diced potato, stirring occasionally until heated thoroughly. Mix the eggs and milk, and pour into the skillet with the meat and vegetable mixture. Stir gently until done. Place the egg mixture on the tortillas in a straight line down the center. Sprinkle with salt, pepper, and cheese. Do not over-fill. Wrap the tortillas around the mixture and serve. #Note: The tortilla must be warm or it will not fold. May be wrapped in foil and placed in oven, or moistened slightly and placed between 2 paper towels in the microwave for about 12 seconds. *BREAKFAST BURRITO II 2 slices bacon 1 tbsp. chopped onion 1 egg 1 flour tortilla 2 tbsp. chopped green chile Grated cheese Sliced avocado Sour cream Taco sauce Fry bacon and set aside to drain. Break egg into bacon grease as if to fry. Break yolk with fork and stir slightly. Sprinkle with onion, salt and pepper. Flip egg, fry until firm. Line center of a flour tortilla with grated cheese. Put egg on tortilla. Spoon green chile and taco sauce over egg. Top with bacon. Fold tortilla sides over. Place in ovenproof casserole. Heat in 350 degree oven. Serve with sour cream and avocado slices. Serves 1. *Breakfast Burritos III 1 pound bacon 10 eggs 1 (16 ounce) can refried beans 8 ounces shredded Cheddar cheese 10 (10 inch) flour tortillas Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and set aside. Wrap the tortillas in foil and warm in the oven. Fry the eggs in a greased skillet until firm. In a small sauce pan heat the refried beans. Top each tortilla with refried beans, 2 strips of bacon, 1 egg and a little cheese.
