I had a dinner salad with italian dressing, french fries with ranch dressing, and chicken fried steak with country gravy on the side, with water. Sounds healthy huh? lol. We tend to splurge on weekends.

It's Monday and I was tired so we (3 of us) had frozen, ready made vegetable lasagne from Costco-just popped it into the microwave-and salad. The other night I tried my hand at making Chili Rellenos--Had a heck of a time getting the skin off of my poblamo peppers. Sure tasted good tho.

Pork chops stuffed with dried cranberries a bit of pork stock flavored stuffing and apples. Our sides where mashed potatoe and pea puree" mashed yukon potatos, thawed peas, sauted carrot bits and red onion" All blended in the food processer with a bit of butter, roasted garlic and sour cream. And a chopped Italian salad packed with kidney beans, white beans, crispy panchetta bits, gorganzola cheese dressing. We had Root beer floats to drink and dessert was vanilla ice cream with chocolate and raspberry sauce drizzle


I see the thumbs down brigade is on the loose again. Itw what we had for dinner ppl are the Thumbs down REALLY nessacary. If so have at it i got better things to worry about then a thumbs down from someone

Chicken and Stuffing Casserole

INGREDIENTS
3/8 (3 pound) whole chicken
3 ounces dry bread stuffing mix
3/8 (10.75 ounce) can condensed cream of chicken soup
3/8 (10.75 ounce) can condensed cream of celery soup
1/3 cup and 2 tablespoons chicken broth (from boiling the chicken)
1/4 cup and 2 tablespoons evaporated milk


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Layer the deboned chicken meat in a lightly greased 9x13 inch baking dish. Sprinkle stuffing mix over the chicken layer.
In a large bowl mix together the soups, broth and evaporated milk. Stir well. Pour this mixture over the stuffing mix, making sure it gets to the bottom of the baking dish (poke around with a fork to let it saturate into the bottom layer). Bake in the preheated oven for 35 to 45 minutes, until it starts to bubble in the center

Super Macaroni Salad
1 16 oz box macaroni cooked,drained and cooled
1 1/2 cups good mayonnaise (Hellmans, Kraft's,etc)
1 cup white vinegar more or less
1/4 cup shredded carrots
1/4 large green pepper finely chopped
1/8 cup minced onion
1 14 oz can sweetened condensed milk
1/ 2 cup sugar

Pour the macaroni in a large bowl, add the veggies including the onions, set aside. In a smaller bowl mix remaining ingredients, taste, it should have a nice sweet and sour flavor, add more sugar or vinegar until you like the taste. Then pour over the macaroni veggie mix, blend well and put in fridge until ready to serve

apple cake it's really good and simple. * 4 cups peeled and diced apples (I like to use 4 1/2 to 5 cups)
* 2 cups sugar
* 1/2 cup salad oil
* 1 cup chopped nuts (pecans or walnuts)
* 2 eggs, well beaten
* 2 teaspoons vanilla
* 2 cups flour (general purpose, not self rising)
* 2 teaspoons baking soda
* 2 teaspoons cinnamon
* 1 teaspoon salt

Heat oven to 350 degrees. Mix apples and sugar thoroughly. Add oil, nuts, eggs and vanilla. Mix dry ingredients together and add to apple mixture. Bake in a greased 13x9 inch pan for 1 hour.
Note: Baking times on the apple cake can very greatly, especially depending on pan size, pan type (glass, metal, etc.), weather conditions, and oven temps. . Although 1 hour is the normal, you may need to take it out earlier. I usually start watching it around 45 minutes -- it should pull away slightly from the edges and be dry on those edges, but still soft in the middle. This is one cake that a little bit underdone is better than cooking it too long and drying it out.

It tastes good with whipped cream on top.
