| Lychee Granita In China, lychees are valued for their delicate heart shape and sweet tasting flesh. Lychees are a perfect choice for refreshing granita – also called "ices." Feel free to experiment with using other types of tropical fruits in place of the kiwi. INGREDIENTS: 2 19-ounce (540 mL) tins pitted lychees 3 tablespoons vodka, optional Lime juice, to taste 2 kiwi fruits, peeled and sliced, optional 4 to 6 strawberries PREPARATION: 1. In blender or food processor, blend lychee and juice until liquified. 2. Add vodka and mix well. Taste and adjust sweetness by adding lime juice. 3. Pour mixture into shallow glass or plastic pan, cover and place in freezer Check after about 2 hours. When mixture is beginning to freeze, stir with fork so it doesn't freeze solid. Stir periodically until mixture freezes into consistency of sorbet. If using an ice-cream machine, follow manufacturer's instructions for sorbet. 4. About 1/2 hour before serving, remove lychee granita from freezer and allow to soften slightly in refrigerator or cool place. Mix well and serve in parfait bowls garnished with kiwi and strawberry slices. An excellent source of vitamin C. Granita Lemoni: Lemon Granita In Greek: ??????? ??????, pronounced ghrah-NEE-tah leh-MOH-nee Granitas are also known as "ices" and are a delicious summer treat. There are two secrets to this recipe: (1) the smaller the pan, the longer it will take to freeze, and (2) it needs to be scraped and mixed every 20 minutes in order get the perfect texture. This recipe calls for a lot of sugar to offset the tartness of the lemon. Adjust to taste. INGREDIENTS: freshly squeezed juice of 8 lemons 3 3/4 cups of sugar 3 3/4 cups of water 3 tablespoons of grated lemon peel (zest - just the yellow) PREPARATION: Combine the sugar and water in a bowl and stir until the sugar has dissolved. Stir in lemon juice and zest. Pour into large pans or pyrex dishes and place in the freezer. After 20 minutes, take it out of the freezer and, using a fork, scrape the bottom and stir the ice chips with the liquid. Freeze. Repeat every 20 minutes until there is no liquid left, and use the fork to break it up into small chunks. Serve in wine or parfait glasses. |
