Coq Au Vin. A wonderful, lip-smacking, elegant French dish that can be cooked by anyone, but takes years to truly whip up a spectacular one. Since she's a great cook with lots of experience to boot, Coq Au Vin would be a great choice, candlelight style.

If you never tried Sushi then I highly recommend you experiment with different taste ranges of raw fish at a Sushi Bar. I always thought I would hate the taste and its yucky and all that crap everyone tells you. Now its one of my favorite places to experiment way over 50-60 different combinations of seafood meals. When else would you try this expensive treat but when its for FREE? Have fun!

Pick a general catagory, like "lamb," tell her what you can't eat, and let the cook go from there.

While I understand it is your choice, I'd really invite the cook to offer their choice based upon what they feel is their speciality. Every good cook has something special in their repetoire that allows them to get a little more enthused about whipping up. Once you outline your own allergy restrictions as a guideline, let the cook have free reign! You might learn to like something you never thought you would have tried before.
